Senior Purchasing Manager

Position Overview

The Food & Beverage Purchasing Manager is responsible for sourcing, negotiating, and managing the procurement of all food, beverage, and related supplies to support daily operations. This role ensures optimal vendor performance, cost efficiency, quality standards, and compliance with company guidelines. The ideal candidate has strong experience in hospitality supply chains, deep knowledge of food & beverage categories, and strong vendor relationships within the South Florida market.

Key Responsibilities

Purchasing & Procurement

• Oversee the end‑to‑end procurement process for all food, beverage, and supply categories.
• Identify, evaluate, and negotiate with local, national, and international vendors.
• Maintain optimal inventory levels and minimize waste through effective forecasting.
• Track market trends and pricing in seafood, produce, proteins, beer, wine, spirits, and specialty items.
• Ensure purchasing aligns with quality, cost, sustainability, and operational standards.

Vendor & Supplier Management

• Build and maintain strong relationships with vendors in the Miami and broader Florida market.
• Conduct vendor audits, tastings, product evaluations, and contract reviews.
• Resolve supply issues, delivery inconsistencies, and product quality concerns.
• Drive competitive bidding processes to achieve cost savings.

Financial & Reporting

• Manage purchasing budgets and cost‑of‑goods targets.
• Analyze weekly and monthly purchasing reports, variances, and price fluctuations.
• Work closely with finance to ensure accurate invoicing, cost coding, and compliance.

Compliance & Quality Assurance

• Ensure all products meet health, safety, and regulatory standards (FDA, USDA, HACCP).
• Support sustainability initiatives, local sourcing efforts, and waste‑reduction programs.
• Maintain compliance with internal controls and audit requirements.

Cross‑Functional Collaboration

• Partner with culinary leadership, F&B operations, and corporate teams to meet needs and standards.
• Support menu development with ingredient sourcing and cost analysis.
• Work with warehouse, logistics, and receiving teams to ensure accurate and timely deliveries.

Qualifications

Required

• 3-7+ years of purchasing experience in hospitality, restaurant groups, hotels, resorts, or cruise lines.
• Strong knowledge of food & beverage supply chain operations.
• Proven negotiation skills and experience managing vendor relationships.
• Data‑driven mindset with proficiency in inventory management systems (e.g., BirchStreet, ChefTec, Adaco).
• Strong understanding of food safety standards and regulatory requirements.
• Excellent communication, organization, and problem‑solving skills.

Preferred

• Experience working in Miami's hospitality/F&B market.
• Bilingual (English/Spanish) strongly preferred.
• Experience supporting multiple units or high‑volume luxury operations.
• Bachelor's degree in Supply Chain, Hospitality Management, Business, or related field.
