SUMMARY
The Director of Purchasing is accountable for executing the supply chain strategy in alignment with overall company objectives. This role, based in Salt Lake City, UT, involves implementing sourcing best practices, managing cost and service level agreements, negotiating contracts, overseeing vendor selection and management, and mitigating risks through effective hedging strategies for price stability and margin protection.
RESPONSIBILITIES
Purchasing & Distribution of All Products:
- Source premium-quality ingredients that meet or surpass company standards within specified cost parameters
- Cultivate strategic relationships with vendors, leveraging their expertise and resources for optimal company performance
- Plan and oversee the sourcing, testing, and delivery of all restaurant products, including food, supplies, smallwares, and equipment
Service Contracts and Product Specifications:
- Create, maintain, evaluate, and update specifications for all products to align with culinary and operational needs
- Define clear partnership expectations, including cost, customer service, and prioritization
- Develop and monitor key performance indicators for supplier performance alignment
New Products & Processes:
- Source new products, collaborating cross-functionally for successful testing and rollout
- Recommend additions or changes to products, procedures, and processes for optimal outcomes
- Oversee a comprehensive RFP process for major categories to ensure competitiveness
Profit and Loss:
- Proactively develop and test strategic alternatives to current processes for swift implementation in emergencies
- Evaluate supply chain risks, develop contingency plans, and introduce redundancy as needed for critical product continuity
- Develop forecasting, inventory management, and supplier capacity management for optimal and cost-effective product availability
ESSENTIAL SKILLS AND EXPERIENCE:
- Bachelor's or master's degree in Protein Science, Ag Business, Supply Chain, Business, or related fields preferred
- Demonstrates ethical and professional standards aligned with organization values
- 5+ years of progressive strategic sourcing experience in the foodservice industry
- Extensive experience and knowledge in buying fresh proteins (pork, chicken, beef, seafood)
